We have re-invigorated the program and the space, currently supporting about 30 culinary entrepreneurs and their fledgling businesses. For our members, we provide technical support, training, oversight, and guidance through the early stages of a new food business. Our managers and directors have immense experience in the food industry from restaurants, to specialty food start-ups, to big-industry growing and processing enterprises. We have launched 35 businesses since August 2009, and our first crop of graduates headed out on their own fall 2010.
Our Kitchen includes roughly 3000sq ft of cooking space with stoves; convection and conventional ovens; ribbon blenders; 300sq ft each of cold and frozen storage; significant dry food and equipment storage; and access to specialty processing equipment including a pasta machine and a blast freezer. All equipment, space, and time can be rented, but only by our members or other companies who carry full health department, state, and federal certifications, as appropriate. Getting Started
Before reserving kitchen time with The Culinary Studio, as well as during any use of our facilities, clients must:
Apply for and complete food service plan review and licensure by the Oakland County Michigan Health Division.
Provide proof of an approved Certified Food Service Manager Certification
If producing food items for re-sale you must obtain a Michigan Department of Agriculture Food Establishment License.
Pay your $300 Security Deposit which is refundable.
Sign the latest Operating Agreement with The Culinary Studio, and receive the Culinary Studio Policy Handbook.
Provide proof of product liability insurance coverage with a minimum of $1 million dollars per occurrence and $2 million aggregate, with The Culinary Studio listed as additional insured and maintain such policy for the duration of any kitchen use.

The Starting Block Kitchen and Business Incubator is a nonprofit, regional economic development organization committed to small business development initiatives--for businesses just starting out, or companies outgrowing their current facilities. The commercial licensed kitchens are available 24/7 at affordable rates to help you grow your food production business.
Kitchen rental fees range from $10/hour for tabletop use, to $12/hour for general kitchen use, and $15/hour for use of the stoves, steam kettles, and fillers. Refrigerator, freezer, and dry pallet storage is available for rent--$75/month per pallet for refrigerator and freezer storage or $1.50 per cubic foot/month, and $10/month per pallet for non-secured dry storage.
Certified staff in food handling and equipment operation is available for assistance and training in food production, including measuring pH levels, batching-up recipes, and packaging and labeling.
Each producer needs a Michigan Department of Agriculture Food Establishment License to use the kitchen to make products for sale. On-site kitchen safety and sanitation training is required, as is product liability insurance.
The kitchen is also a USDA establishment and a FDA Food Canning Establishment for acidified foods.

Kitchen Description: A Taste of Long Island Shared Use Kitchen is an 800 square foot commercial kitchen space designed to meet the needs of small scale and start-up food producers. Our mission is to help our culinary entrepreneurs start and grow their businesses with lower risks in a healthy, professional and supportive environment.
In addition to the shared use kitchen, A Taste of Long Island operates a specialty food market, giving our kitchen clients an opportunity to sell to the public. We also host farmer's markets (beginning in September 2012).
Shifts are booked in four hour blocks, available on a 24/7 basis. A four hour shift is $110 and additional hours may be available at a rate of $25/hour.

Kitchen Description: Just Add Chef is a 1500 sq commercial kitchen located in Central Austin offering a shared use kitchen for food producers and commissary space for mobile vendors. The hourly rate for the kitchen is $20. Commissary rates vary. There is a $300 deposit due at the time of the signing of the Membership Agreement. The deposit secures a key to the space and its contents. The kitchen is accessible 24 hours per day every day of the week. Hours are allocated on a first come, first served basis.
To get started at Just Add Chef, it is necessary for the majority of the users to obtain a city issued Food Enterprise Permit. This requires the submission of a "Change of Ownership" application and a "Food Enterprise Permit" application, as well as obtaining a Food Manager Certificate. The "Change of Ownership" application and the "Food Enterprise" application must be completed and submitted at the same time to initiate the permitting process. The City requires that one person on each permit obtain a Food Manager Certificate issued by the Austin/Travis County Health and Human Services Department. I will provide all of the necessary applications.

Summary…The Farm Market Kitchen Incubator…a project of The Living Lake’s Heritage, Inc. 501(c)(3)
The Farm Market Kitchen Incubator located in Algoma is a shared-use food processing business incubator and food heritage center. It functions as a community-based economic development project serving the Northeast Wisconsin region.
Primarily serving Brown, Door, Manitowoc and Kewaunee counties it is also working with tenants/businesses from Wiscsonsin and surrounding states.
Mary Pat Carlson is the executive director for the project and also does private consulting for small-scale private food processing business and community-based projects.
At the present, 60 small-scale processors working out of 45 businesses are utilizing this processing facility and accessing business entrepreneurial training and technical food processing support. These entrepreneurs range from chefs and caterers to farmers and food processors…some as young as 16 in the Youth Entrepreneurship Program. Off-site clients include specialty food stores, B&B’s, educational institutions, and other non-profits. All are businesses engaged in the processing of value-added food products for resale, some are entering and other are expanding food related businesses (restaurants, catering, mobile vending, etc.).
The facility is available 24 hrs. a day at an hourly rate. Rates are based on time of useage and include long-term anchor tenant reduced rates.
The food-processing incubator provides individual technical support and training workshops addressing food industry related issues. Two commercially equipped kitchens are available.
The Food Heritage Center is the marketing tool of the Incubator. It is also located in the Gerald J. Haegele center…right on the shores of Lake Michigan and adjacent to Algoma’s Crescent Beach Board Walk in the Main Street District of Algoma. The Center is a desired location for tourists, locals, and event planners. The Center hosts on-going food events including tours, samplings, special events, dinners, and farmers’ markets. A retail outlet showcases the newest products produced in Northeast Wisconsin. And, rental space for workshops, small conferences, meeting and special family events is available.
